I thought I was going to die, waiting for the rice to finish cooking. I don’t mean to brag but I just made up the soupy stuff and it’s freakin’ amazing. Here’s what it is, in no particular order: chopped tomatoes, coconut milk, butternut squash, cilantro, garlic, ginger, lemon juice, curry powder, salt, red pepper flakes, and black beans, cooked down and poured over short-grain brown rice, with fried plantains on the side. I licked my bowl clean and then I licked it again.
